Spice Processing

Spice processing, a process that combines science, technology and art, covers a number of procedures, from the collection and selection of high-quality raw materials, to fine grinding and strict blending, to efficient sterilization and safe packaging. The aim is to extract the purest and freshest flavor from the raw materials and ensure the safety of the products.

Benefits of Spice Processing

Spices need to be processed in order to extract active ingredients, improve taste and aroma, maintain stability and extend shelf life, ensure product safety, and improve suitability and convenience for better use in food processing and flavoring.

How are Spices Processed?

Processing of spices is a multi-step process, from the handling of raw materials to the final packaging at the factory, to ensure the quality, flavor and safety of the spices. A variety of processes are involved, such as milling, blending, sterilizing and packaging, through which spices can be made easier to use, more attractive, and can ensure product quality and safety to meet consumer needs.

Raw Material Collection and Pretreatment

1. Selection of quality raw materials: Sourcing fresh or dried spice plants from all over the world, such as chili peppers, peppercorns, cinnamon, cloves, etc.

2. Cleaning: For fresh spices, cleaning is done to remove soil, impurities and foreign matter.

3. Drying: For fresh spices, it is usually necessary to dry them naturally or use low temperature drying equipment to reduce their moisture to a level suitable for storage and processing.

The first step in spice processing is milling. Many spice ingredients (e.g. peppercorns, cloves, cinnamon, etc.) need to be milled first in order to convert them into a fine powder or granular form. The milling process usually uses specialized milling machinery and equipment to grind the ingredients to the desired size and texture. The purpose of milling is to increase the surface area of the spices so that they can release their flavors and active ingredients more easily.

1. Universal Grinder

Input materials, which are crushed, sheared and impacted during the high-speed rotation of the toothed disk to realize the crushing and refinement of materials. The crushed material automatically enters into the trapping bag by centrifugal force. The dust generated is filtered and recovered by the bag.

Universal mill is also usually a common choice in spice processing. It is a multi-functional milling equipment that can be applied to materials of different hardness, humidity and viscosity, and it can realize a variety of processing requirements, such as coarse grinding, fine grinding and micro-crushing. Spices that can be processed include hard and soft spices, such as pepper, peppercorns, cloves, cinnamon, etc., as well as powdered, granular or lumpy raw materials.

2. Cryogenic Pulverizer

In some cases, the cryogenic pulverizer Can be used for spice processing, especially for some hard spice raw materials, such as cinnamon, cloves, etc.. It is especially suitable for ultrafine grinding of special materials such as heat-sensitive, high tenacity or flammable and explosive.

Grinding Stage:

The material will be in contact with liquid nitrogen, using the characteristics of liquid nitrogen boiling point is extremely low (-196 ℃), quickly make the material internal moisture freezing as well as reduce the overall temperature of the material, to achieve the effect of brittleness, easy to crush. Into the cavity of the low-temperature materials in the high-speed rotation of the crushing disk or knife role by the fine grinding, to achieve the effect of crushing.

Grading Adjustment:

It is equipped with an airflow sieve grader, which separates the powder that meets the standard according to the set fineness requirement and allows the coarse particles that do not meet the standard to return to the grinding chamber for further grinding.

The need to use liquid nitrogen mill also depends on the specific processing requirements and the characteristics of the spice raw materials. For soft and fragile spice raw materials, it may not need to use liquid nitrogen mill, but can choose other suitable grinding equipment.

Mixing is one of the key steps in flavour processing. In the mixing stage, different spice components are blended in precise proportions to ensure that the final product has a consistent flavour and aroma. According to a specific recipe, different types of spice powders are precisely mixed in certain proportions to make compound spices, such as curry powder and five-spice powder. In addition, in some cases, spices may also need to be mixed with other excipients such as salt, sugar, etc. to achieve specific recipe requirements.

1. Satisfies powder and liquid (solid-liquid), liquid and liquid (liquid-liquid) mixing.
2. Gentle mixing does not destroy fragile materials, such as crystal materials.
3. Low energy consumption mixing effect is more suitable for the chemical reaction of materials.

In the process of material handling, the double spiral cone mixer firstly feeds the materials to be mixed continuously or in batches into the equipment through the feeding port. The mixer is equipped with two asymmetrically arranged and simultaneously rotating and rotating spiral blades, which run at a specific speed, causing the material entering the mixer to lift upwards along the cone wall and spread radially.

In this process, the material undergoes centripetal force and centrifugal force, forming a multi-dimensional, multi-level cross-flow, and produce shear, extrusion, and friction and collision between the material between the spiral blades, so as to achieve rapid and uniform mixing. When the material is fully mixed, it will gradually flow to the discharge area at the bottom of the mixer, which is controlled by a specially designed discharge valve to ensure that the mixture is discharged from the equipment in a residue-free and stable manner.

Sterilization and Purification

Sterilization is an essential part of a spice production line to ensure food safety and consumer health. High-efficiency steam sterilizer or other aseptic equipment uses high temperature steam or rays, etc. to carry out strict and thorough sterilization of the mixed spices to effectively kill potential microorganisms and ensure that the product meets strict food safety standards.

1. High Efficiency Sterilization

The use of high-temperature and high-pressure saturated steam to penetrate the material, can effectively kill most of the microorganisms, including bacteria, fungi, spores, etc., to ensure that the spices to reach the sterile state, thereby improving food safety.

2. Good Uniformity

Steam is a good heat transfer medium, which can be evenly distributed between the spice particles, making the sterilization process more thorough, there will be no local non-sterile situation.

3. Environmental Protection and Safety

Steam sterilization process does not use chemical reagents, so there is no risk of chemical residues, in line with the requirements of green environmental protection.

Packaging and Storage

After the successful completion of the sterilization process, the subsequent packaging is essential to ensure sterility and stable quality of the spices.

Packaging requirements depend on:

1. Type of spices

2. Whether it is ground or intact

3. Stored humidity

Some spices such as chillies and peppercorns are more volatile in their aroma when ground and therefore require packaging materials that effectively isolate them from air and light, such as foil pouches or airtight jars, while larger particles or whole forms of spices such as cinnamon sticks and star anise are likely to be packaged in packaging more concerned with humidity resistance and protection of structural integrity.

For ground spice powder, its surface area in contact with air increases, easy to oxidise and deteriorate and the aroma is easy to escape, so usually choose a good sealing, oxygen and light packaging, such as vacuum packaging, nitrogen-filled packaging or multi-layer composite film packaging.

If the intact spice block or whole spices, although relatively less susceptible to environmental influences, but still need to pay attention to moisture and dust, can be selected with a sealing strip of the carton, plastic bottles or metal cans and other containers for packaging.

High humidity environment, spices are easy to absorb moisture caking or mould, so the packaging should have good moisture resistance. This can be achieved through the use of moisture-proofing agents, desiccants and packaging materials with waterproof function, such as bags with moisture-proof coating inside, and individual small packages with dehumidifying tablets. At the same time, some high-end products may also use specially designed breathable and impermeable materials to ensure that the spice maintains appropriate humidity conditions.

To sum up, the modern spice processing line through a series of rigorous process of grinding, mixing, sterilisation to packaging, not only to enhance the production efficiency and quality stability of spice products, but also at the source to guard the consumer’s tongue safety, for the world’s gastronomic stage added countless wonderful moments of evocative.
